Recipe: Scrambled Eggs and Bacon

Cook the bacon in a separate skillet over medium heat. Either eat the strips on the side or tear them into pieces to add to the eggs.

Beat the egg whites with the olive oil and 1 teaspoon of milk, if desired.

If adding the optional ingredients, saute these in a skillet with cooking spray then pour beaten egg whites over the top before scrambling.

Top with cheese and stir until it has melted. Have grapes and a half slice of wheat or rye toast with 1 teaspoon of peanut or almond butter.


  • Three strips of turkey bacon
  • Cooking spray
  • 4 egg whites (for men, 6 egg whites)
  • 2/3 teaspoon olive oil

Optional Ingredients:

  • Spinach
  • Sweet bell pepper, chopped
  • Mushrooms, sliced
  • Onions, chopped
  • Low-fat, natural mozzarella or pepper jack cheese
